My Brazil Nut Pesto and White Beans with Kale Recipe

Soak your beans over night, I use 2 cups and I freeze what I don’t use. Rinse your beans and place into a pot and boil the beans for about 10 minutes then simmer till tender.

Take your food processor
5x Brazil nuts – bitz
add a bunch of basil
the juice of a lemon
Extra Virgin Olive Oil
1 clove of garlic

Bitz till a consistency you like your pesto to be and add salt and pepper.

Once your butter beans are cooked, add washed spinach or kale or a mix of both. Let the heat from the beans cook your greens, should take about 5 or 8 minutes. I just cover with the lid, then add lemon juice and EVOO and season. Taste and add your pesto mix it through your beans.

Serve Enjoy

Any extra freeze for the quick week night dinner.

This recipe does take time but it is worth it! Very bite is Moorish, Delicious and Satisfying!

Oh and all cravings are gone…….. because all box’s are ticked.

The Cheese
2 Cups cashews – soaked 2 hours in water
1 Lemon –  juiced (or 4 Tbsp)
3x Tbsp  Nutritional Yeast
1x tsp Paprika – I use Sweet Paprika
Pinch x salt
½ Cup Water (a little more if needed)

Blend cashews, lemon juice and water in a high speed blender. Use a tamper if you have one. (if you don’t have a powerful blender, you may need to pulse and add slightly more water). Add the rest of the ingredients and blend to a cream. Taste and add salt or more paprika to your preference.

Should taste great and even better if this is made the night before.
SAUCE
6 x Medium Tomatoes
3 Sun-dried Tomatoes depending on the depth of flavor
(soaked for 1 hour in warm water and keep that water in case you need to add for a runnier sauce)
1/8 Red Onion
1 Garlic Clove
Dried Oregano
1 x tablespoon  Cup Raw Apple Cider Vinegar
3 x tablespoons of Extra Virgin Olive Oil

Blend into a sauce, check it’s to your liking. Then add or a just to your taste.

Crust – this makes enough for two pizza’s

1 cup of oats – if you need gluten free oats
1 cup of sunflower seeds
As much Oregano dried as you like
1x tablespoon of chai seeds (soaked in water 1/4 a cup until seeds have soaked up the water) should look like a gel
1x low teaspoon of baking soda
1x teaspoon of turmeric
salt and pepper
Begin by making oats / sunflower seeds with salt flour, running your oats through a food processor until a powder or flour. Add  to your flour all the other ingredients and blend it should go into a moist  dough. If not make more of the chai gel and add what is needed for the mixture to ball into a dough.
On cling film top and bottom, push into a pizza base shape and make 2 bases to a shape you like. Bake on baking paper on a low heat about 150 degrees for 20  to 30 minutes. Should be dry and holding together, allow cooling time. Then assemble your pizza together.

Put put the pizza together and basil leaves and any other toppings you enjoy.

In this recipe I have used ‘Coconut Flour’ which I find thirstily to work with. What I mean by this is, I find the coconut flour drinks in all liquids in the cake mixture, so the mixture needs to be wet. Also a lot of people say to me, ‘that coconut flour and coconut sugar is so expensive’, and I have learnt I need less of these ingredients in the mixture.

So in my mine,  I would call this a transition recipe and think of this as an investment to wean off white sugar or shop bought cakes.
One of the most empowering things I have thought myself, is to know and trust 100% what I am eating. Learning this recipe is an act of self-love and self-care if you are having trouble with letting go of food groups like cakes and sweets.

Preheat your oven to 180oC

3 x ripe bananas large in size
Mashed in a bowl in cinnamon mixed in

In a large bowl add
¼ of a cup of Coconut flour – don’t go over the ¼ of a cup size – go even a little under
a little mineral salt
¼ teaspoon of baking soda
¼ teaspoon of baking powder
1 cup of Coconut sugar
6 x large Organic free range eggs (if you use smaller sized eggs, then use less flour)
½ cup of Coconut fat (I use extra virgin)- melted to liquid gently

Add your dry ingredients into the bowl, mix with a folk. Add your eggs, 1 by 1 and the melted coconut fat, mix until the lumps are out. And add the banana mash and mix this should look very wet and sloppy. Pop into cupcake liners or your chosen cake tin (if you are using a tin please line and grease first).

Place into the oven for 15 minutes and check if your skewer comes out dry, if not pop back into the oven for a few minutes and check.

I enjoy these more warm.

Delightful Raspberry Mousse

My delightful Raspberry Mousse

It is a beautiful bank holiday day here in London ! The sun is shining and it is glorious outside and I am going walking in the park with someone I love talking too. But I will be buying more raspberries to make more Raspberry mousse today, as I ate most of it last night……

I used my gut instincts with the measurements, by picking a bowl and thinking how much will I want to eat. Remember this recipe is good for you and I have mainly eaten and do eat a high vegetable diet. What this means to me is, at lunch and dinner my plate will be half covered in vegetables some raw and some cooked. Then protein and carbohydrate.

Chia seeds – soaked into a gel I did this with home-made almond milk or you can use water for about 10 to 15 minutes then start stirring, until all liquids are soaked up. Taste the chia seeds to see if they are soft, if not add more liquid and keep stirring. I use 3 tablespoons of chia then ¾ of a cup of almond milk.

Raw English honey – as I live in London – if you live in the USA, Canada, Australia or New Zealand try to use honey from your country to build your immunity in your tummy 70% lives here.
If you can find a local bee farmer, we have them in London. I find this so amazing !

Organic raspberries
2 x good teaspoons of raw cocoa powder – this makes the mousse dark red and lifts the mousse
Some cinnamon

Mix in your ingredients until smoothie and taste. The mousse should be a dark red colour with the raspberries, tahini and a hint of chocolate coming through. If you place it in the fridge for about an hour it will taste even better.

This weekend at the Farmers market there was new season asparagus and strawberries, it was amazing to see some new season fruit and vegetables in on the stalls.  Especially as I had  stopped by my favourite cafe on the way to the farmers market  and there was a queue outside the door which meant I needed to take away food and drinks if I wanted anything to eat.
