Tahini Oat with Chocolate Cookies

There are cookies that are better for your body, I don’t believe date heavy treats better than refined sugar choices. With Christmas over and people saying things like ‘time to be healthy again’I don’t believe Christmas or Christmas food is unhealthy. I don’t think treats made with large amounts of dates are a better choice. Diet food is even worse…

Cravings set in quite fast after Christmas different types of cravings, how we spend time thinking about these feelings cravings is much more important to me. Than the food that’s been thought of…in the circle of repeating thoughts low self esteem is somewhere in there, with holding on inside to stop or control feelings from being expressed.

I know now happiness is a choice and it comes from the inside out so in this confusion of food, feelings and cravings. Something like what I have made can be in the middle, while our internal life balances out. Enjoying low refined sugar sweetened food made from oats and not refined flour, I’ve used a some shop brought chocolate from a brand I like. Feeling bad about having cravings is a waste of time, that is why I learnt to make my own treats because its empowering…..

Recipe will follow…..

Strawberry Choc Chew sweetened with Rice Syrup

My Strawberry Choc Chew
My Strawberry Choc Chew

Making peace with yourself requires treats you can enjoy, these are chewy, chocolaty and strawberry awesomeness. I didn’t measure at all, I looked at the dish I would set this in and used my gut feeling.

The base:
Gluten free organic oats — blitzed in a food processor to a fine texture
Brazil nuts organic and macadamia nuts add to the processor and blitzed
Cinnamon about a low teaspoon
Vanilla extract liquid a lot
Raw Cacao powder 3 good tablespoons
Mineral salt a pinch
Blitz all this together then add rice syrup and liquefied coconut oil, pause till a ball forms or little balls form. If not add more liquids. Line a dish and push the base mixture into it. Have a little taste and see if you need to add anything. Once in the fridge this will become more chocolaty.

I left mine for an hour.

The Recipe for Easter Sunday Flourless Chocolate Cake

200 grams good quality dark chocolate – I brought mine from Wholefoods.
150 grams of organic grass-fed butter (with salt) – room temperature

6 organic eggs – I brought the misshapen eggs from the Saturday mornings farmers market.

2 tablespoons of English honey
2 teaspoons of natural vanilla
2 tablespoons of cinnamon

Preheat your oven to 150 C
Lightly oil (I used coconut fat) on to the baking paper I lined the 20 cm cake tin with.
Melt the chocolate and butter in a bowl, over hot water but not boiled. Once melted take off the hot water.

Put all eggs into a bowl and beat until light and creamy in colour.
Add the honey, vanilla and cinnamon with 2 large tablespoons of coconut flour.

Fold the two mixtures together, I used a butter knife to hold the eggs into the melted chocolate and butter. Pour into your lined baking tin.

Place into the oven and bake for 30 minutes until set and the cake bounces back to your soft touch. Cool down the cake when cold enjoy with friends and cups of tea and a good catch up.

Milks or Mylks

Choc Cherry Amazingness
Choc Cherry Amazingness

I started experimenting with different milks about 8 years ago. One I really love is Sesame Milk, I do love the flavor. I like to make my own milks myself and my body doesn’t like almond milk, at all it makes me sick but my taste buds like the taste. Rather than fighting my cravings for sweet foods I’ve learnt to experiment with trying new foods for more nutrition to nourish my body.

I don’t buy different milks made by companies and sold in supermarkets or shops ever.

I only make what I need which is normally a serving for one and freeze any extra.

I try to chew my smoothies to start the digestion process too, chewing also helps me feel satisfied too.

This is the most delicious recipe if you like the taste of tahini.

In a blender

Add water I use about 1 ½ cup to start with
2x good dessert spoons of tahini paste (I like the pale or light tahini)
½ a cup of frozen cherries (without the stones inside) I buy these in season
1 good tablespoon of cacao powder
I squeeze of rice syrup (if you need extra sweetness)

Blend and check the consistency if too thick add more water. And enjoy a healthy choc, cherry smoothie that helps to balance out cravings.

Chocolate 101

……  Vanilla ……        Cinnamon …..    Quality Natural Salt…….Vanilla   …… Cinnamon …..Quality Natural Salt………

Why ?

These 3 ingredients are like best friends with raw cacao  they bring out the chocolateness and lifts the flavor. Without needing to add extra sweetness to soften the natural bitterness in the cacao.

I am a Fan of Sweetness

I Love Well Made Chocolates

I Love Well Made Food in General

I Am A Foodie and I Love to Share

Sugar and all things sweet, I have tried to give up sugar totally! I tried for 1 day, 1 month, 3 months and I managed 4 years. It was hard and it was easy and some days I wasn’t nice. In particular when I gave up cups of tea, honestly I was a better all round person with cups of tea in my life. I did this because I was iron deficient. I have learnt to create recipes with;

Local Honey

Rice Malt Syrup

Sweet Potatoes

Pumpkin I use in Chocolate Brownies

Coconut Sugar in my Chocolates

The “sweet taste” can trigger blood sugar swings and cause issues with the reward centre of the brain, creating addiction issues. Which is what I don’t like to experience, when I learnt fructose gets stored around my liver. Like a roll around my tummy, I could give up a lot of the different sugars. Just like that!  I also read this and this and I learnt sugars get stored on the face and tummy. I don’t like it when the appetite hormones switch on and I can’t stop eating sweet things. So I learnt what I do like and what I do want to happen in my taste buds and body.

Oh, Dates too! Which do you chose to enjoy

If I prefer to eat well to cherish my body so live peacefully in my mind. Rather than being affected by negatively because I love the taste of chocolate. I learnt how to make it as healthy as I can, interestingly my obsession with chocolate has disappeared! Odd right …. or empowering….

I knew years ago I would and could never give up chocolate. What I really needed to give up was the stinking thinking after eating it, as I could not live up to my own idealism in my own mind.
How did this go in my mind?

These feelings were distracting me from living in the present moment + I had started reading raw cocao has more than 300 nutritional compounds and is one of the richest sources of antioxidants of any food on the planet!
Magnesium and other essential minerals calcium, sulfur, zinc, iron, copper, potassium and manganese
Polyphenols antioxidant rich flavonoids
Vitamins: B1, B2, B3, B5, B9, C, E
Essential heart-healthy fat: oleic acid a monounsaturated fat

I wanted these in my body because I wanted to think and feel amazing!
This is part 1
Next part 2 my new understanding of Fats!
