If you would like to try one new recipe and you still feel like being ‘healthy’. Or maybe feel like trying something colourful, please try this recipe. Taste is number one, then colour.
Cook quinoa to the instructions, let in cool.
Take a pan to saute,
1x onion – cook to the onion goes clear on coconut fat or butter
3x garlic cloves
1 teaspoon turmeric
1 teaspoon cumin
1/2 teaspoon curry power
Add sliced courgette,and let the courgette cook, I added more spices at this point and went with the smell and used my gut feeling. Add any vegetables to you like. Add the quinoa and mix and saute, taste and add salt and pepper and spices so its very earthy in flavour.
Serve onto your plate, mix through spinach and let it sit for 5 minutes. Then take your pomegranate and pop it all over your dish.
